- Mix Seasoning: Transfer to mixer. Add one #25 size bag of seasoning and 1 oz of Cure (6.25% sodium nitrite) and mix for 3-4 minutes until the meat is slightly tacky.
- Regrind: Regrind through a 5/32 inch or 1/8 inch plate.
- Form Strips: Form into strips and proceed with your preferred drying method.
Solid Muscle Jerky Using a Vacuum Tumbler:
- Prepare Meat: Place 25 lbs of lean ¼ inch thick strips of meat (beef or venison) in a vacuum tumbler or mix well.
- Add Ingredients: Add 1.25 lbs of water, 1 oz of Cure (6.25% sodium nitrite) not included, and one #25 size bag of seasoning.
- Vacuum Tumble: Mix well or Vacuum tumble for 20 minutes on a slow speed.
- Hang or Lay Strips: Hang strips of meat on hooks or lay on screens and proceed with your preferred drying method.
